Sugar-free chocolate cake
- 150 g of almond flour
- 50 g of coconut flour
- 3 eggs
- 100 ml of coconut oil
- 50 g of SaporePuro erythritol
- 50 g of unsweetened cocoa powder
- 1 packet of baking powder
- 1 pinch of salt
In a bowl, mix the almond flour, coconut flour, unsweetened cocoa powder, baking powder, and salt. In another bowl, beat the eggs with the erythritol until the mixture becomes frothy. Gradually add the melted coconut oil and mix well. Combine the two mixtures and stir until you obtain a smooth batter. Pour the batter into a cake pan and bake at 180°C for approximately 25–30 minutes.

TECHNICAL SPECIFICATIONS:
At an industrial level, it is obtained from sugary substrates (starch, glucose, sucrose, etc.) through microbial fermentation by selected osmophilic yeasts. Under Directive 2008/100/EC, the Commission recognized and assigned erythritol an energy value of 0 kcal/g. In addition to its sweetening properties, erythritol is authorized for the same food applications as other polyols and under the same conditions of use.
ICE CREAM: erythritol is used in low-glycemic-index ice cream and industrial ice cream to keep it creamy at low temperatures.
PASTRY: it can completely or partially replace sucrose, having very similar characteristics, without altering the final sweetness or consistency. It is generally used with stevia to give volume to this natural sweetener.
