Iota Carrageenan allows you to obtain a panna cotta with an incredibly creamy and velvety texture, ensuring a perfect structure even with reduced fat or starch dosages.

Ingredients

Base

  • 500ml milk (or 250ml milk + 250g cream)
  • 45g sugar
  • 4.5g cornstarch
  • 2.5g Iota Carrageenan
  • 0.1g vanillin

Coverage

  • 50g fruit
  • 20g glucose syrup
  • 7g citric acid
  • 1g pre-activated agar

Preparation

1 Carefully mix the Iota Carrageenan with the sugar and cornstarch. Gradually pour the mixture into cold milk (or milk and cream), using a hand whisk or an immersion blender to perfectly disperse the powders without creating lumps.
2 Heat the mixture over medium heat. Iota Carrageenan requires a temperature of about 75-80°C to dissolve completely and activate. Bring to a gentle boil, stirring continuously to ensure the starch does not settle at the bottom.
3 Once it reaches a boil, remove from heat and add the vanillin. If you desire an extra-fine texture, strain the mixture through a fine-mesh sieve before pouring it into molds.
4 Pour the liquid into single-serving molds. Unlike animal gelatin, Iota begins to form a gel at around 40-45°C. Let it cool at room temperature, then refrigerate for at least 2-3 hours to stabilize the structure.
5 Blend the fruit with glucose syrup and citric acid. Add pre-activated Agar-Agar (dissolved in a small amount of hot liquid if necessary) to give the topping the right consistency.
