Description

Monohydrate Dextrose ✨

What is dextrose?

Monohydrate dextrose is a simple sugar widely found in nature. It is present in plants, ripe fruit, and honey, but it can also be obtained industrially through the hydrolysis of corn starch or potato starch. It appears as a white crystalline powder with a less sweet taste than sucrose and an estimated sweetening power of 70–75%. A curious characteristic is the slight cooling sensation felt when tasting it.

Belonging to the carbohydrate family, dextrose is closely related to other sugars such as fructose, sucrose, galactose, lactose, and maltose. It is widely used in both the food and pharmaceutical industries as a sweetener, excipient, and energy source, and is found in syrups, tablets, supplements, and even saline solutions.

Properties and uses ⚙️

Adding dextrose to ice cream recipes helps improve creaminess and texture, preventing sugar crystallization and lowering the freezing point of the mixture. This makes the ice cream soft and silky without becoming excessively sweet. In addition, dextrose can enhance flavors and has bacteriostatic properties, which increase its technological usefulness.

In confectionery and baking, it helps provide stability to doughs and promotes the proper browning of baked goods. It is also used in cookies, packaged brioches, and other baked preparations, enhancing their flavor and consistency.

Applications 🍨🍰

Dextrose is used in both artisanal and industrial settings, particularly in:

  • Ice cream: improves creaminess and texture, enhances flavors, and prevents crystallization.

  • Confectionery and baking: ensures stability and promotes browning in baked goods.

Why choose dextrose?

Dextrose is not used only for sweetening: it is an essential technical ingredient for ice cream and sorbets because it lowers the freezing point and provides structure without excessive sweetness. It is versatile and suitable for both hot and cold processing.
