APPLICATION AND USAGE INFORMATION

  • ULTRA-TEX 4 is a high-performance corn-based modified waxy food starch, swelling in cold water. It imparts a rich, creamy mouthfeel while providing a short, smooth, full-bodied texture.
  • ULTRA-TEX 4 is recommended everywhere for functional starch characteristics even without cooking with cold use. However, it is extremely versatile as it promotes the convenience of providing instant viscosity but will also resist shear or high temperature conditions.
  • ULTRA-TEX 4 has excellent freeze-thaw stability.

Typical applications include:

Cold-processed salad dressings or emulsified sauces:
An ideal application for ULTRA-TEX 4 is the preparation of instant salad dressings or emulsified sauces. ULTRA-TEX 4 has excellent heat, acid and shear resistance and is therefore ideal for resisting shear encountered during homogenization of such low pH products.
Typical use levels will depend on oil content and desired viscosity, but generally 2 to 6 percent is recommended. In many cases upwards of 10 percent less starch can be used than conventional starches to achieve the same viscosity in these applications.


Fruit tart fillings: because ULTRA-TEX 4 is particularly resistant to heat and acids, it is recommended to prevent boiling in fruit tart fillings during baking.


Microwave sauces:
ULTRA-TEX 4 can be used from 2 to 4 percent as an excellent viscosity builder in these applications due to its shear tolerance. Because it hydrates with cold or hot water, the viscosity builds up faster than a cooking starch and thus eliminates the hassle associated with mixing dry microwave sauces during heating, as the cooking starch may initially settle. ULTRA-TEX 4 creates rich, dense, and creamy textures.
Dry blends of sauces and gravies: ULTRA-TEX 4 is used in these sauces if greater process stability or cold storage
required compared to traditional pregelatinized starches. However, ULTRA-TEX 4 provides more richness to the product by imparting a richer, creamier texture.

Usage information:
ULTRA-TEX 4 will develop viscosity and consistency as soon as it comes into contact with cold or hot water.

It is recommended that ULTRA-TEX 4 be mixed dry with other ingredients, particularly sugar, or dispersed in oil to help create dispersion in water.
The viscosity of ULTRA-TEX 4 is stable at high temperatures in both neutral and acidic systems
(ph=3). Typical use levels in liquid systems might be 2 to 5 percent.
