APPLICATION AND USAGE INFORMATION
ULTRATEX 3 is a modified tapioca-based pregelatinized food starch , ideal for instant products with a mild flavor.
It quickly swells in water at room temperature to make a paste with a short, smooth texture that enhances the shine and appearance of the finished product.
It also provides good preservation properties in varying cold conditions, while its lack of flavor imparts an extremely mild taste.
- ULTRATEX 3 is a high-performance cold-water swelling modified tapioca food starch. It provides a very smooth,
glossy, short consistency in a range of instant applications, but also tolerates the pasteurization process. Its tapioca base
provides a very mild flavor profile with good melting characteristics. ULTRATEX 3 is suitable for refrigerated and
frozen applications. - ULTRATEX 3 is recommended everywhere for functional starch characteristics even without cooking with cold use. However, it is extremely versatile as it promotes the convenience of providing instant viscosity but will also resist shear or high temperature conditions.

Milk-based instant desserts:
ULTRATEX 3 can be recommended from 2 to 5 percent as an excellent thickener and stabilizer with rapid hydration, rapid viscosity development, rich creamy textures, excellent flavor release and good melting.
Baked fillings and baked goods: high viscosity and short consistency with good baking stability can be achieved with 2 to 6% ULTRATEX 3 in baking fillings. In addition, from 1 to 3 percent in a cake batter, ULTRATEX 3 can maintain the moisture and quality of cakes for a longer shelf life.
Dry mixes: Typically used from 2 to 4 percent, ULTRATEX 3 can be used to thicken dry mixed sauces such as béchamel where flavor release is important.
Cheese sauces: the smooth, glossy appearance, superior flavor and rich, creamy texture of ULTRATEX 3 are ideal for cheese sauces. ULTRA-TEX 3 can also be used in other slightly acidic sauces.
Usage information:
ULTRATEX 3 will develop viscosity and consistency as soon as it comes in contact with cold or hot water. We recommend mixing ULTRA-TEX 3 dry with other ingredients, especially sugar, or dispersing it in oil to help it dispersion in water.
The viscosity of ULTRA TEX 3 is stable at high temperatures, particularly in neutro systems.
