    How to use it. Mix agar with some sugar or other powdered ingredients, disperse it once it reaches 40°C in the liquid part, wait for 85°C and bring to cool. The gel will begin to form below 35°C. To use it, we recommend waiting until the next day. 🍮

    The dosage of Agar Agar depends on the specific product and the desired effect. In general, the amount varies from 0.2% to 2% of the total weight of the product.

    For an icing we recommend using 1% + 20% sugar + 2% dextrose and 10% liquid glucose

    Glossy Glaze : Combine agar glaze with sugar, glucose and dextrose, then dissolve in water and boil until a hot solution is reached at 65-68 brix to be poured (the day after cooling) at a temperature of 40°C on frozen desserts. Here c the AGAR GLAZE must be at a dosage of 1 percent, because it will take quickly and form a gelled, cuttable structure once thawed and transparent and more resistant to freezing.

    Gelatin for glossy fruit: makes a blend of powders (sugars and agar glaze) to be dissolved in water and boiled until a hot solution is reached at 65-68 brix to be poured at 60°C into a small jar. Allow to gel covered with foil overnight. The next day break up the gel with a spatula and apply directly to the fruit.

    Here I recommend the AGAR GLAZE 0.55-0.6% dosage. Creamy, nappage-like effect ready to use from pectin.

    The AGAR GLAZE being low viscosity, remains creamy, ideal for puddings and mousses, not from a hard gel but from a creamy gel.

    Try it in 0.55-0.6% to 1% glazes but also try it in simple desserts such as panna cotta you will see what texture !

    It has a maximum gel strength of 160 and a solubility at 80°C greater than 80 percent.
    1 g of Agar Agar Glaze absorbs about 75ml of water.

    Ingredients: 500 ml fresh cream 2 teaspoons of agar agar 100 g sugar 1 vanilla bean (or vanilla extract) Fresh berries for garnish
    Instructions: In a saucepan, mix the fresh cream, sugar and vanilla. Add the agar agar and bring to a boil over medium heat, stirring constantly. Pour mixture into molds or glasses and let cool to room temperature. Refrigerate for at least 2 hours or until panna cotta solidifies. Garnish with fresh berries and serve!

    Fruit Jam

    Ingredients: 500 g fruit of your choice (strawberries, raspberries, apricots, etc.). 200 g sugar 2 teaspoons of agar agar Lemon juice
    Instructions: Cut the fruit into small pieces and place in a pot with the sugar and lemon juice. Bring to a boil and let it cook for about 10 minutes. Add the agar agar and stir well. Pour the hot jam into sterilized jars and seal them tightly. Let cool and store in the refrigerator.

    Ingredients 250gr Fruit puree of your choice (strawberries, raspberries, apricots, etc.), 100gr sugar, 500gr glucose syrup, 20gr dextrose, 8gr agar agar, 120gr water. Instructions: Mix all the powdered ingredients together. Put SaporePuro glucose syrup, fruit puree and water in a small saucepan. When it reaches at least 40°C pour in the powdered ingredients and mix for a couple of minutes. Bring everything to a simmer. Cool and use the next day.
