Fiber Enriched Crepes with a Greedy Filling: Taste and Wellness in One Bite

Crepes are a culinary masterpiece that lends itself to endless interpretations. But what happens when we combine crepe tradition with innovative and nutritious ingredients? Fiber crepes are born, a delicious variation that combines taste and wellness in one bite.

Ingredients for Dough:

  • 2 eggs
  • 2 tablespoons of almond flour
  • 1 teaspoon of bamboo fiber
  • 1 tablespoon of broth or milk
  • 1/2 teaspoon salt
  • A drizzle of olive oil for the frying pan

Preparation:

  1. In a large bowl, combine the eggs, almond flour, bamboo fiber, broth or milk, and salt.
  2. Stir vigorously until smooth and homogeneous.
  3. Lightly heat a nonstick skillet with a drizzle of olive oil.
  4. Pour a ladleful of batter into the hot pan, spreading it evenly over the entire surface.
  5. Cook the crepe for a few minutes, then gently turn it over and let it cook on the other side until golden brown.
  6. Repeat until all the dough is used up.

The Stuffing:

Ingredients for the Stuffing:

  • Boiled broccoli
  • Onion
  • Garlic
  • Sausage
  • Butter
  • Sage

  3. Add the crumbled sausage and brown it.

  2. Generously spread the prepared filling over half of the crepe.
  3. Roll the crepe on itself, sealing the filling inside.
  4. Repeat with the remaining crepes and filling.
