How to make decorations with isomalt?
Here is a practical guide on how we made cake decorations with the glass effect created with isomalt.
To decorate our cake we will only need the Isomalt Pure Flavor . (Which is available in different formats based on the required usage.)
Get a non-stick pan and an induction hob or stove.
Remember that isomalt, once melted, reaches high temperatures that can cause serious burns, so the use of suitable gloves is recommended.
We start by pouring the isomalt into the pan and turn it on to medium power.
We will notice that as time passes the isomalt sugar will begin to melt and become liquid.
Wait until the isomalt syrup created becomes crystalline without browning/caramelizing.
Once the syrup is formed and very liquid, we are ready to create abstract designs on the silicone mat or on baking paper.
Once you have created the desired shapes, let them cool for at least 5 minutes.
Very gently and calmly, just remove the baking paper and the silicone mat. You will notice that the shapes created will come off very easily.
Once they are ready, just put them in a box in a cool, dry place, so as not to ruin them. The shapes can be broken according to the type of decoration you want to obtain.
