Autumn Pacchero with Pistachio Paste with Simona Sbano

We again challenged our chef Simona Sbano, and she amazed us with a new all-fall first course!

A pacchero with SaporePuro pistachio paste, guanciale and pumpkin!

A dish as simple as it is impressive that will amaze even you! Preparation time just 15 minutes. The rest of the time is for you to enjoy.

 

For this recipe he used:

- Paccheri (quantity depending on guests :) )
- Sliced bacon Q.b.
- Pumpkin Q.b.
- 1 pinch of salt
- 1 pinch of pepper
- One tablespoon of oil
- SaporePuro Pistachio Paste

PROCEDURE.

Given the pacchero cooking time of at least 15 minutes, the first thing to do is to put the pasta on the stove so we bring the water to a boil, add salt and then lower the paccheri.

Meanwhile, we move on to baking the pumpkin in the oven to soften it by seasoning it with salt and pepper.

As for the guanciale, let's cut it into thin slices and on a frying pan brown until crispy.

At this point we prepare our creamy side dish by putting 3 tablespoons of Pistachio Paste in a pan, and dilute with cooking water.

When the pasta is ready, let's drain it directly into the pan and continue stirring to mix everything together.

If you wish, you can garnish the dish not only with guanciale and pumpkin but also with pistachio granola, also SaporePuro.
