Si ottiene dalla tostatura e poi successiva raffinazione per rendere i pistacchi sotto forma di pasta densa e fluida. E' composta da pistacchi unicamente di origine Sicilia .  Senza coloranti . Ha un aspetto verde scuro/oliva.
